Salad with cold smoked Baltic herring

  • 200g Piipanoja Baltic herring fillets from Nauvo
  • ½ dl crème fraîche
  • 1 tbsp sour cream
  • 1 finely chopped red onion
  • 1 tsp Hango Mustard
  • Freshly ground black pepper
  • Bunch of finely chopped chives
  • Finely chopped dill

Remove the skin from the fillets and cut them into small cubes. Mix all ingredients together and season

Beetroot syrup

  • 2dl beetroot juice
  • 1dl sugar
  • Splash of red wine vinegar
  • Salt

Boil the ingredients until the liquid becomes syrupy.
Serve with a thin slice of island-baked bread fried in butter.
